Baker's Spaghetti

Ingredients

500g spaghetti
2 Tbsp butter
1/4 cup olive oil
2 cups fresh breadcrumbs
l cup walnuts, finely chopped
2 garlic cloves, finely chopped
1/3 cup chopped flat-leaf parsley
200g black olives, sliced
Salt and freshly ground black pepper
1 cup freshly grated parmesan cheese

Method

Cook spaghetti in rapid boiling water until just tender. Meanwhile, heat butter and 2 tablespoons of the oil in a large frying pan over medium heat. Add breadcrumbs, walnuts and garlic and cook, stirring, for 7 minutes until lightly golden. Remove from heat, stir in parsley and olives, then season.

Drain spaghetti and place in a serving bowl, toss with remaining oil and parmesan until combined. Add breadcrumb mixture, toss and serve
immediately.
