1 Gently flatten warm potatoes. Cook in half the oil in a frying pan for about 5 minutes on each side until golden. Remove. Keep warm.
2 Place 2 sage leaves on each medallion. Wrap in prosciutto. Cook in remaining oil in a frying pan for 3 minutes on each side. Add wine, lemon juice, butter and 1/4 cup water. Simmer for 3 to 4 minutes or until pork is cooked and tender. Season.
