Place sugar and 4 tablespoons of water in a saucepan over a medium heat and boil until sugar dissolves. Remove from heat, allow to cool, then stir in rosewater. Slice skin, pith and outer membrane from grapefruit, then remove segments by slicing each side of the inner membranes. Toss segments with syrup and remaining fruit in a large bowl, infuse for 3 minutes, then serve.
Unlike most custard, panna cotta is thickened with gelatin instead of eggs, meaning fewer kilojoules, less fat and easier prep. A small amount of cream gives the dessert a creamy taste, but the bulk of it is made of low-fat buttermilk. Each serve delivers 250mg of calcium - a quarter of your RDI. And the berries are rich in antioxidants.

These are rich enough to tame a choc craving but contain relatively little chocolate.
