'Feel better' chicken, vegetable & noodle soup

Cold & Flu season is here so it pays to have a good soup recipe on hand.

The goodness from the parsley, onion and garlic will boost your immune system.  

Remember, when you have a cold, clear soup is better than creamy soup.  It won't make you as 'flemmy'.

Nic's Feel Better chicken, vegetable & noodle soup

Ingredients

  • Olive oil
  • 1 onion, chopped
  • 1-2 garlic cloves, crushed
  • 1 small carrot, chopped
  • 1 stick celery, chopped
  • 2 cubes chicken stock
  • 4-5 cups water
  • 1 teaspoon curry powder
  • Half teaspoon chili powder (optional)
  • Flat leaf parsley
  • Noodles
  • Shredded BBQ chicken

Method

  1. Lightly fry your chopped onion but don't brown it. We want to soften it, not add colour.  
  2. Add your crushed garlic to the onions.
  3. Add carrot, celery, chicken stock, water, curry powder, chili powder.
  4. Bring to the boil and then simmer for 20 mins (until the vegetables are soft)
  5. Meanwhile, in a separate saucepan, prepare your noodles.
  6. Ladel a portion of soup, noodles and top with a few shreds of BBQ chicken.
  7. Serve with a sprinkling of fresh parsley.

Cook's Options

  • Add a teaspoon of Marmite or soy sauce for extra flavour.
  • As an alternative to noodles, try rice, quinoa, cous cous, pasta or even potatoes
  • Add a tin of crushed tomatoes for flavour and colour
  • Add capsicums, mushrooms, swedes, parsnips, turnips, corn, spring onions, beans, peas...the sky is the limit.

The secret of a good chicken soup is to cook the chicken meat/bones with carrots, parsley, black peppercorns, celery and onion, very slowly so that it just simmers. What's the point of boiling up a chicken stock cube and topping up with already cooked or roosted chicken? these recipes always amaze.

Hi robertpo and affordablegranits. Yes, you are both absolutely right about the stock. I should have mentioned that in the interest of a "quick!-make-me-feel-better-no w" remedy I do use pre-prepared stock. For days when you have more time on your hands you can't beat soup made from a chicken carcass
