INGREDIENTS
300g sausage mince
1 tbs olive oil
1 large red onion
2 loaves Turkish bread
190g jar basil pesto
1/2 cup torn basil leaves
3 cups shredded mozzarella
4 roma tomatoes, thinly sliced
Fresh basil leaves, to garnish
Extra olive oil, to drizzle

1. Using hands, break sausage mince into small pieces.
2. Heat oil in a large frying pan. Add sausage pieces. Cook, turning occasionally, until browned all over. Add onion. Cook until onion is soft and the sausage pieces cooked through.
3. Place each loaf on an oven tray lined with baking paper. Spread pesto evenly over tops of bread. Spoon sausage mixture over the pesto. Sprinkle with torn basil leaves and cheese.
4. Cook, uncovered, in a moderate oven (180ÂșC) for 12 minutes, until base is crisp and cheese melted.
5. To serve, arrange tomato slices over hot pizza. Garnish with basil leaves then drizzle with extra oil.
TIP: Sausage mixture can be made up to one day ahead. Keep covered in refrigerator. Assemble pizza just before cooking.
