White Chocolate Craisin Friands

Serves: 12.
Prep Time: 10 min.
Cooking Time: 25 min.


Ingredients
6 egg whites
1½ cups icing sugar
½ cup plain flour
1 cup almond meal
185g unsalted butter, melted
¹⁄³ cup craisins (dried cranberries)
100g white chocolate, chopped

Pink Chocolate
¹⁄³ cup white chocolate melts, melted
Pink food colouring

1. Grease a 12-hole friand pan (½ cup capacity).
2. Beat egg whites with a fork until just frothy. Add icing sugar, flour, almond meal, butter, craisins and chopped chocolate. Stir until just combined. Divide mixture among prepared pan holes.
3. Cook in a moderate oven (180°C) for about 25 minutes, or until cooked when tested. Stand in pan for 2 minutes before turning out on to a wire rack to cool.
4. Meanwhile, to make pink chocolate, place melted chocolate in a bowl. Add a few drops of food colouring to tint pink. Stir until combined. Spoon into a plastic snap lock bag. Squeeze to one corner, twist bag then snip tip.
5. Drizzle pink chocolate over friands and allow to set.
