Ingredients
1 cup shredded coconut
Pink food colouring
25 pink marshmallows
1¼ cups white chocolate melts, melted

1. Place coconut in a snap lock bag. Add a few drops of pink food colouring. Rub mixture through the bag to tint pink.
2. Using a skewer, carefully dip pink marshmallows into melted chocolate. Shake off all excess chocolate. Roll marshmallows in coconut mixture. Place on an oven tray lined with baking paper. Set aside until set.
3. Serve truffles as a special treat with tea or coffee.
