Spaghetti with feta meatballs

Ingredients
  • 250g spaghetti
  • Baby rocket leaves, to garnish
  • Feta meatballs
  • 200g block feta
  • 500g beef mince
  • 1/2 cup packaged breadcrumbs
  • 1/4 cup finely chopped semi sun-dried tomatoes
  • 1 egg
  • 2 tsp seasoned salt
  • Tomato sauce
  • 1 onion, finely chopped
  • 1 clove garlic, crushed
  • 1 tbs olive oil
  • 2 x 400g cans crushed tomatoes
  • 1 tbs brown sugar
  • 2 tsp dried mixed herbs

1 To make feta meatballs, cut feta in half lengthways. Then cut each half into 16 equal cubes. Place remaining ingredients in a large bowl. Using your hands, combine well. Mould 2 tsp of mince mixture around each cube of feta to enclose. Roll into balls. Place on a tray.

2 Cook spaghetti in a large pan of boiling, salted water until tender. Drain Spaghetti well.

3 To make tomato sauce, cook onion and garlic in oil in same large pan until soft. Add crushed tomatoes, brown sugar and mixed herbs. Bring to boil. Simmer, Uncovered, stirring occasionally, for 15 minutes. Stir in spaghetti.

4 Cook meatballs in a heated, oiled frying pan, turning occasionally, for about 8 minutes, or until browned all over and cooked through.

5 Serve meatballs on spaghetti. Garnish with baby rocket.

Tip If you prefer, chicken, lamb or pork mince can be substituted for the beef mince in this recipe.

It sounds nice but since there are different types of feta, which one should be used?
