2 Place butter, sugar, egg and essence in a medium bowl. Stir well. Add combined sifted flours, cocoa and coconut. Stir to combine. Spoon mixture into prepared pan. Press mixture firmly over base.
3 Cook in a moderate oven (180°C) for about 30 minutes, or until firm. Remove and cool pan on a wire rack.
4 To make icing, place icing sugar and cocoa into a bowl. Add butter and water. Stir until spreadable.
5 Spread icing over top of slice. Sprinkle with chocolate bits and extra coconut. Allow to set.
6 Remove slice from pan. Cut into rectangles and serve.
