Sticky Choc Slice

Ingredients
  • 1 cup self-raising flour
  • 1/2 cup pitted dates, chopped
  • 1/2 cup walnuts, chopped
  • 1 tsp finely grated lemon rind
  • 125g unsalted butter, chopped
  • 1 cup brown sugar
  • 2 tbs cocoa powder
  • 2 tbs golden syrup
  • 1 egg, lightly beaten
  • 75g dark eating chocolate, chopped
1 Grease a 19cm x 30cm lamington pan. Line pan with baking paper.

2 Place flour, dates, walnuts and rind in a large bowl. Stir ingredients to combine.

3 Place butter, sugar, cocoa and syrup in a small saucepan. Stir over a low heat until sugar is dissolved. Remove from heat. Transfer to a medium bowl, and stand for 5 minutes. Stir in egg.

4 Add butter mixture to flour mixture in 2 batches. Stir until smooth. Spoon mixture into prepared pan. Smooth over top.

5 Cook in a moderate oven (180°C) for about 20 minutes, or until cooked when tested. Cool slice in pan.

6 Place chocolate in a heatproof bowl. Sit bowl over a saucepan of simmering water until smooth. Remove. Drizzle over cooled slice. Stand until chocolate is set.

7 Remove sticky choc slice from pan. To serve, cut into rectangles.
