Sausage rolls

Ingredients
  • 2 tsp vegetable oil
  • 1 onion, finely chopped
  • 2 cloves garlic, crushed
  • 4 bacon rashers, finely chopped
  • 2 tsp curry powder
  • 250g beef mince
  • 300g sausage mince
  • 2 eggs, lightly beaten
  • 2 cups gluten-free breadcrumbs
  • 2 green spring onions, thinly sliced
  • 2 tbs finely chopped fresh parsley
  • 2 tbs tomato paste
  • Salt and pepper, to taste
  • 8 pieces gluten-free tannour bread
  • Tomato sauce, to serve

1 Heat oil in a large frying pan. Add onion, garlic, bacon and curry powder. Cook, stirring occasionally, until onion is soft. Transfer to a large bowl. Add mince, eggs, breadcrumbs, onions, parsley and tomato paste. Season with salt and pepper. Using your hands, mix ingredients thoroughly.

2 Divide mince mixture into 8 equal portions. Roll each portion into a 25cm-long sausage shape to fit the bread.

3 Heat a large frying pan over a medium heat. Place a piece of bread in the pan. Cook for about 1 minute each side, or until pliable. Remove and place a sausage at
one edge of each bread piece. Roll to enclose. Repeat with remaining bread and sausages. Wrap each roll tightly in foil. Place on an oven tray.

4 Cook in a very hot oven (240°C) for 25 minutes, or until cooked through and crisp. Remove foil. Cut each sausage roll on a diagonal into 3 pieces.

5 Serve sausage rolls with tomato sauce.

Tip The mince mixture can be made up to 2 days ahead. Make sausage rolls just before serving.
