Melted butter, for greasing
1 Tbsp caster sugar
1/2 cup pure icing sugar
1/4 cup cornflour
1/3 cup lime juice
3 eggwhites
1 Tbsp icing sugar,
for dusting
1 Preheat oven to 180°C. Brush 4 x ¾-cup-capacity ovenproof dishes or ramekins with melted butter. Sprinkle inside of dishes evenly with caster sugar, shake to coat and discard excess sugar. Arrange dishes on an oven tray and put in fridge until required.
2 Sift half the icing sugar onto a sheet of baking paper and remaining half into a bowl.
Add cornflour and lime juice to icing sugar in bowl and gently whisk until combined.
3 Put eggwhites in a small bowl of an electric mixer and beat until soft peaks form. Add icing sugar on baking paper and beat until thick and glossy. Using a large metal spoon, add half the eggwhites to lime mixture and gently fold together. Add remaining eggwhites and fold through lime mixture.
4 Spoon mixture into prepared dishes or ramekins. Put oven tray with ramekins in oven and bake for 10-12 minutes or until golden and soufflés have risen. Dust with icing sugar; serve immediately.
